I always have a jar of this super simple Pickled Red Onion in my fridge as it is the perfect little addition to uplift any dish. I love adding it to my burgers, salads, pizzas and even avocado on toast!
½ cup apple cider vinegar
½ cup water
1 tsp salt
1 Tbs sugar
1 tsp mustard seeds
1 red onion, thinly sliced
1. Mix all ingredients, except the onion, in a jar until all is dissolved.
2. Add the onion and refrigerate for at least 2 hours before eating. Can last up to two weeks in the fridge.
