This is one of my go-to soup recipes to help warm me up on those cold winter days. Full of flavour and pairs perfectly with warm, crispy bread!

INGREDIENTS

1 Tbs olive oil
1 onion, chopped
2 carrots, peeled and chopped
2 cloves of garlic, minced
salt and pepper to taste
1/4 tsp paprika
1/4 tsp chilli flakes
600g kumara, peeled and cubed
4 cups vegetable stock
1/2 cup coconut cream
fresh parsley, chopped to serve

METHOD

1. Heat the oil in a large pot over medium high heat. Add onion and carrots and cook until soft, around 5 minutes.
2. Add garlic, salt, pepper, paprika and chilli flakes and cook until fragrant.
3. Turn up the heat and stir in the kumara and stock. Bring to boil then reduce heat and simmer for 15 minutes, or until the kumara is soft.
4. Remove from heat and blend until smooth. Add coconut cream and more stock depending on desired consistency. Serve with fresh parsley and crispy sourdough (optional).
