Start your day the right way with this light and healthy Chia Pudding. I love to mix up this recipe by using different fruits and yoghurts - Blueberries and Coconut is my favourite!
INGREDIENTS
1/2 cup coconut yoghurt
1/4 cup frozen berries
1/2 tsp lime zest
1 cup your choice of milk (coconut, soy or almond)
2 Tbs chia seeds
1 tsp maple syrup
1 Tbs desiccated coconut
fresh fruit of your choice
METHOD
1. Blend together yoghurt, frozen berries and zest. Divide the mixture between two jars.
2. In a small bowl, mix together milk, chia seeds and maple syrup until combined well. Let it rest for a few minutes before giving it another mix.
3. Scoop the chia mixture into the jars, over the yoghurt mix. Cover and refrigerate for 1 to 2 hours or overnight.
4. When ready to eat, top with fresh fruit and desiccated coconut.
