You really can't mess this up. Add your favorites like garlic, chilli or onions and mix and match vegetables to get your favorite combo! Brine can be reused once or twice just top up with more fresh veg!

INGREDIENTS

1 large cucumber
½ cup water
½ cup white vinegar (rice or apple cider also work)
1  tablespoon sugar
1-2 teaspoons salt
Generous amount of freshly ground black pepper
¼ cup fresh dill chopped roughly

METHOD

1. In a bowl add the water, vinegar, sugar, and salt. Stir to combine until sugar and salt have dissolved. Add the cucumber, and dill. Taste and adjust to your liking.
2. Cucumbers should be completely covered in the brine.
3. Let the mixture rest in the fridge until you are ready to eat.
