If you have never tried a Lemon Posset, you are missing out! Super easy dessert with only three ingredients and you can choose how lemony you want it. Smooth and refreshing - it makes a perfect palate cleanser and pairs well with berries or mint.

INGREDIENTS

300ml cream
4-6 Tbs caster sugar
zest of 1 lemon, grated
juice of 1-2 lemons, depending on how strong you want it

METHOD

1. In a saucepan over medium heat, combine the cream, sugar and zest and bring to the boil. While continually stirring, boil for 3 minutes.
2. Remove pan from heat and stir in lemon juice. Taste and add more lemon juice to your liking. Strain the mixture if you prefer it without the zest bits.
3. Pour the mixture into dessert jars. Let it cool before covering and refrigerating for at least 3 hours or overnight.
4. Garnish with grated lemon zest or a dollop of passionfruit curd (optional). Can be stored in the fridge for up to 3 days.
