This Fresh Homemade Salsa has the right amount of kick to elevate any mexican dish or even perfect just to eat as a dip with tortilla chips.

INGREDIENTS

1 can diced tomatoes
3 tomatoes, cut in quarters
2 cloves garlic, roughly chopped
1 onion, roughly chopped
1 green chili or jalapeno, seeds removed (optional)
½ cup coriander
1 tsp honey
pinch of salt
juice of ½ lime or lemon

METHOD

1. Add both tomatoes, garlic, onion and chili together in a food processor or blender and pulse in short bursts until everything is chopped up.
2. Add the coriander, honey, salt and lime juice in the processor. Gradually add the lime juice to taste, so that it is not too overpowering.
3. Pulse until desired consistency and adjust to taste. Scoop into a jar and store for up to a week in your fridge.
