This is a twist on the super easy Pickled Red Onion, play around with your favorite herbs and spices cloves, chilli, bay leaves, cinnamon, star anise or garlic all work well. These onions are the perfect little addition to uplift any dish. I love adding it to my burgers, tacos, slaws, and even in potato salad for a pop of crunchy contrast!
½ cup apple cider vinegar
½ cup water
pinch of salt
2 Tbs sugar
1 tsp juniper berries (and any other herb and spices!)
1 red onion, thinly sliced
1. Whisk vinegar with sugar, salt and water until sugar dissolves, pour into liquid jar.
2. Add the onion, and juniper and refrigerate for at least 2 hours before eating. Can last up to two weeks in the fridge.
