Makes 6 Texas Muffins

2 C flour
4 t baking powder
½ cup fresh spinach
100g feta cheese
¾ cup tasty cheese
cayenne pepper
½ t salt
1 T sugar
4 rashers bacon
80 g butter
1 egg
1 cup milk


1. Preheat oven 200 degrees Celsius.
2. Grease mini muffin pan.
3. Cook bacon either under grill or in a fry pan, set aside to cool & once cooled cut into small pieces.
4. Sift flour, baking powder, salt & sugar and mix to combine.. Fold in a pinch of cayenne pepper & feta & tasty cheeses.
5. Melt butter and beat in milk and egg. Add bacon. Fold into flour mix – do not over mix!
6. Fill muffin tins half fill with mixture and bake for approx. 15 mins. (Baking times may vary depending on your oven). You’ll know they’re done when a skewer inserted
