Soak up all the nutrients in this fresh, bright salad.


½ red onion, finely sliced
1 cup cherry tomatoes, halved
100g bocconcini, halved
½ avocado, diced
4 cups spinch or arugula
radish and lemon slices (optional)

Dressing:
3 Tbs balsamic vinegar
1 tsp Dijon mustard
¼ cup olive oil
salt & peper to taste
Place greens in base of jar and spoon over
a few tablespoons of dressing, mix. Layer
onion, tomato, avocado, radish and lemon.
Top with bocconcini. Place all dressing
ingredients in capsule and shake until
smooth. Seal both jars securely.
