Tropical Fruit Salad Feel like a light breakfast? I love this recipe especially in summer, its so hydrating and refreshing!
2 tsp lime zest
2 Tbs lime juice
2 tsp coconut sugar
100g pineappe, chopped
100g watermelon, chopped
2 small kiwi fruit, chopped
1 banana, chopped
small handful of shredded coconut
Place the lime zest, juice and coconut sugar in base of jar. Stir until sugar is dissolved.
Layer in pineapple, watermelon, kiwifruit and banana. Toast the coconut for a few minutes in pan,allow to cool then add to capsule. Seal jars tightly.
Will last in the refrigerator for up to 3 days.
Make use of the excess produce with pomegranate, grapefruit, mandarin, banana, grapes or whatever is in season.
