This boozy jam has all the flavours of your favourite Strawberry Margarita, with fresh strawberries, tangy lime and a splash of tequila. Perfect for making cocktails or mocktails, on cheese and crackers or as a topping on some ice cream!


3 punnets of strawberries, rinsed and hulled
1 cup sugar, preferably jam setting sugar
¼ cup lime juice
1 tsp lime zest
2 Tbs tequila
1 Tbs triple sec or Grand Marnier 
pinch of salt


1. Lightly mash strawberries. Place all ingredients into a saucepan over medium-low heat. Stir until sugar has dissolved.
2. Once the sugar is completely dissolved, raise the heat to high and boil, stirring often until setting point is reached.
3. Remove from heat and skim off any foam. Ladle hot jam into sterilised jars leaving headspace. Wipe any spillage before securing seals and bands, allow jars to cool. Store in a cool dark place.
