These Greek Inspired Meatballs are a great weeknight dinner as its quick and easy - just pop it in the oven. Get all the flavours of Greece by pairing it with a nice chunky Greek salad or even better, a couscous salad!

INGREDIENTS

MEATBALLS
300 grams beef mince
150 grams pork mince

¼ cup breadcrumbs, preferably panko
¼ cup fresh parsley, roughly chopped
½ onion, grated
1 clove of garlic, minced
zest of 1 lemon
2 Tbs lemon juice
1 egg
1 tsp oregano, dried
½ tsp coriander, ground
½ tsp cumin, ground
salt and pepper to taste

100 grams feta
3 Tbs Greek yoghurt
fresh parsley to serve

METHOD

1. Prepare meatballs by placing all meatball ingredients into a large bowl and mix well with hands for about 5 minutes. Cover and refrigerate for about an hour.    
2. Preheat oven to 200°C and line a baking tray with baking paper. 
3. Remove from fridge and start making the meatballs by rolling them in your hands to your preferred size (I usually like them bite-sized). Place them on baking tray, evenly spread out with space in between them. Bake for twenty minutes, flipping them halfway through to evenly cook.
4. To serve, place meatballs in serving dish and crumble feta on top. Dollop yoghurt on top and sprinkle with parsley.
