Peach and bourbon pair together perfectly to create a boozy concoction, marrying together to make the most delicious, tipsy jam!

INGREDIENTS

1.5kgs ripe peaches
¼ cup bourbon
90mls lemon juice
2 cups sugar

METHOD

1. Halve, peel and remove peach pits. Roughly chop fruit and toss in a bowl with half the lemon juice and half the sugar. Cover and refrigerate overnight.
2. Add fruit and juices into large pan. Simmer over medium heat, stirring occasionally. Cook for 10-15 minutes or until the mixture has reached your desired consistency, the peaches should be nice and tender. For a smoother jam, blend the mixture. 
3. Add bourbon and remaining lemon juice. Increase heat and bring to boil, stirring frequently to avoid it burning at the bottom. Add sugar then keep stirring until it has dissolved. After about 15 minutes the mixture should have thickened, test setting point has been reached. Scoop into sterilised jars and seal tight. 

TIP: For a boozy summer drink, add ice, bourbon and soda water to a few spoonfuls of jam!
