This Watermelon, Prawn and Feta Salad sounds like a chaos of clashing flavours, but I assure you it's more like a party in your mouth! If you want to get it even more of a flavour boost try it with this watermelon vinaigrette.
1 Tbs lime juice
200 grams prawns, peeled and deveined
200 grams mixed salad leaves or lettuce
250 grams watermelon, cut into bite-size cubes
¼ cup mint leaves
½ punnet blueberries, washed and dried
20 grams feta
2 Tbs of lemon juice or watermelon vinaigrette
1. Marinade the prawns for five minutes in lime juice with a pinch of salt and pepper.
2. Bring a frying pan to medium heat. Add a splash of oil and cook the prawns for a few minutes on each side, until pink.
3. Assemble the salad by placing the salad leaves in two bowls and topping with the rest of the ingredients. Sprinkle over the lemon juice or vinaigrette and enjoy!
