Who knew that maple and vanilla would bring out these amazing flavours from the apricots. You'll have to stop yourself from finishing all in one go - once you try this twist, you'll never be able to go back!


1 kg apricots
1 kg sugar
½ cup maple syrup
juice from 1 lemon
1 vanilla bean, split
2 apples, grated (preferably Granny Smith)


1. Wash and dry the apricots then halve them and remove the stones. 
2. In a large bowl, toss together the apricots, vanilla bean and maple syrup then cover with sugar and leave it overnight.
3. Transfer to a large saucepan and bring to a boil over low heat, stirring until the sugar has dissolved. Turn up the heat and boil for 20 minutes, stirring regularly.
4. Scoop out any foam, remove the vanilla pod and test for setting. Once ready, transfer to sterilised jars and seal tight.
