Now that avocados are super cheap, I thought I would share some of my favourite ways to use them starting with these Avocado Cups! A colourful, low-carb snack jam-packed full of flavour or if you want to make it a bigger meal serve it with fresh toast or leafy greens!

INGREDIENTS

2 ripe avocados
1 tomato, chopped
¼ cucumber, chopped
1 Tbs pomegranate seeds
50 grams feta cheese, crumbled
1 Tbs coriander leaves, roughly chopped
juice of half a lime
salt and pepper to taste

METHOD

1. Cut both your avocados in half and remove the pit then set aside. In a bowl, combine the rest of the ingredients making sure its evenly mixed.
2. Spoon the mixture over the avocado and sprinkle with some salt and pepper.
